When it comes to food and catered events, never underestimate La Verne’s Corner Butcher Shop Boys John and Will Fuelling.
Sure, these macho guys from Michigan are meat lovers, smoking and grinding out their own hot dogs and sausages every day, not to mention offering a daily deli case full of prime fresh-cut steaks, chops, poultry and seafood.
After all, they get as excited talking about smoking a pork butt for 16 hours and putting “their fork to the pork” as some people do talking about their two-week vacation in Paris.
But John and Will also have a sensitive side. They’re equally at home hosting a tea party or a baby shower as they are throwing an old-fashioned backyard barbecue bash.
“We can do it all and we’ll take care of everything,” John said, seated at the big farm table inside their La Verne shop. “We put up the tents, pop up the umbrellas, unfold the chairs and layout the plates, silverware and napkins.”
Over the years, they’ve established great relationships with party rental companies and bakers, including Michael Mergil, the owner of Modern Mayhem, which specializes in unique birthday and wedding cakes.
Indeed, the reason The Corner Butcher Shop and its catering division have been so successful is that the owners are extremely adaptive. They don’t hide behind their meat counter. They ask what you want and then get busy delivering it … and more.
“At one of our events, we guarantee no will every go hungry,” John said. “You’ll never find 25 people waiting in line only to hear the food has run out.”
And the food is always fresh and delicious. Specialties include homemade potato salad and mac and cheese. They treat their meats with specialty rubs and seasonings, including an intriguing new selection from Nydia Sanchez, owner of the online Spanish spice shop, “The Spanish Tin.” (www.etsy.com/shop/thespanishtin)
“We do everything the old fashioned way,” John added. “We don’t take any shortcuts.”
And they don’t short their client.
“We don’t promise a black-tie affair, then deliver select-grade steak,” he said. “We show up with prime-grade steak.”
Perhaps, the Corner Butcher Shop’s greatest strength is authenticity. “If you want a home-cooked, home-flavored meal the way grandpa used to serve it in his backyard on the Fourth of July, that’s us.
“But we can also do the finger foods for your next baby shower, too.”
